update default texture pack to something less shit, like dokucraft
revamp combat entirely, add magic, better melee, new weapon types, more ranged weapons
introduce more pre-generated structures with randomized loot that can have unique properties you can't get from enchanting
remove the whole "spawner" system and have better monster spawning mechanics to make dungeons less tedious

Add more animals and hostile mobs.
Add bosses for the regular world. Maybe giant spiders and giant variants or regular mobs.
Be able to hatch the ender dragon's egg and ride a dragon.
Improve paintings, allow users to create their own paintings.
Give more experience for everything.

I'd give the game some fucking direction. Minecraft is a game where devs throw so much shit at the wall that everything comes across as shallow and half-baked.

It's got some survival elements, but it doesn't go out enough to fall into the Survival Sandbox genre like Rust. It's got some sandbox elements, but it's rather restrictive compared to sandbox games like GTA. It's got some fantasy elements like skeletons and magic and potion brewing, it's got some modern elements like redstone, it's got some original elements like Creepers and Squidward jew villagers and Phantoms and the Nether and the End, but doesn't really commit to one particular setting. Similarly, the game has combat and farming and potion brewing and enchantments and building and plenty of other mechanics, but they usually have the depth of a puddle. Combat is press LMB to win, farming requires just waiting, potion brewing requires to look it up on the Wiki to find out what you want, enchantments are random and building still feels lackluster when there's still no goddamn furniture in the game. I could go on and on but I think I made my point.

Add more tiers and make an actual progression system that isn't over within 30 minutes.
Create more hostile mobs that isn't a fucking zombie or skeleton variant.
Double or triple the available vertical space in a map.
Add giant caves with this newly adquired space.
Add more movement options, mainly vertical movement.
Make lingering potions have a use.
Add more tiny structures that can generate, some might be useless and have no loot like wells in the deserts or other might have a chest or two.
Port snowlogging to java.
Add more liquids, with their unique texture, flows, and how it affects movement. Not just "water but recolored" like all those modpacks.
Port new content from Dungeons.
If to make new animals, make them tameable.
Fix the motherfucking hunger system.
