You have to immerse yourself. It took me a couple of tries to start having fun with the game. Some user even said that the fun starts when you reach Vegas, but it didn't for me, at the time.
If you aren't having fun by the time you reach Bison Steve hotel, you should probably give it a rest and try again later.

Gameplay is too dated to be enjoyable without mods anymore tbqh, Was my first major wRPG though and its characters and lore stand out to me as very memorable and contributing a significant amount to my interest in the classic games and the post-apocalyptic genre. Few western RPGs in the modern day actually offer you the level of freedom in story choice that New Vegas did across so many different quests and branches.
