Im new to AC. How does the game work? Can i just play it at my own pace, or am i gated by what other players are doing and whatever nintendo puts in the game via events?

That's the pure essence of this series. You play at your own pace and schedule. There are holidays and events but they are announced on the bulletin board. Its all up to you. Play for an hour or just 5 mins. That's what makes it a special series.
Is AC the type of game where you only want to play it once and not back to back? Kind of like Sims or Rune Factory?

I was playing it in anticipation for New Horizons and I miss how a lot of the 3D models were textured with pixels. I get that times change, but I feel like it fit the game much better. Everything is round and bubbly now. But then again I have a sweet spot for anything textured that way.
