What's the genuine appeal of this genre? Storytelling is piss poor, characters don't behave like human people and it tries to be deep by appealing to themes about godhood or evil in general in the most shallow way possible. Also a lot of filler that doesn't respect characters nor players. Is it just popular with people who want to indulge in simplistic power fantasy?

I find when someone says they like both rts and turn-based strategy games, AND they like action-adventure games on top of that, they tend to be pretty brainless. I call them immersive sims because of the agency they give to the player. Bioshock is also an immersive sim in a way but it isn't a stealth game per se. And I am not a big fan of stealth games, I just like some of them because of the freedom they give.
I know people laugh at the term but it is valid and works well in communicating what it is about.

I don't know if Warren Spector coined the term "immersive sim" but he definitely calls Deus Ex an immersive sim. So it's weird that you never heard the creator of Deus Ex calling it an immersive sim.
