It follows the rest of the mechanics in being something where it gives you hints with which to build your own lore. There's clearly a Shoujo-Shuumatsu kind of desolation or apocalypse vibe.
I like to think that The Void (dimension) is a corrupting Nothing-esque sort of entity that slowly consumes everything, but it can't, or at least has some sort of difficulty with, destroy bedrock. The old Humans from the earliest versions of Minecraft layered the bottom of The Overworld with bedrock, and as a result is alive because the bedrock layer stops the Void.
The Pigmen of the Nether overcompensated and laid down too much bedrock. This, over time, caused the core temperature of the dimension to rise as everything became more pressurized and eventually turned it into a volcanic hellscape, leading to the demise of their civilization and their degeneration into barely sentient tribes of piglins, hunter-gatherers.
The Endermen couldn't or didn't lay down enough bedrock. The civilization was more isolated and the stone was generally a lot tougher and more resistant to the Void, but by the time of the game it's chewed though most of it, with only scattered islands of tough end stone and obsidian remaining. The civilization of the End remains, but it is on the verge of complete collapse and ruled by a dragon tyrant.
The demise of the Pigmen brought about a bronze age sort of collapse. The humans had traded so much with the Pigmen that their own civilization imploded because of it. The Overworld had always been full of monsters, but now they began to multiply in numbers exponentially without the humans to keep them back, and once-trivial diseases became widespread and wreaked havoc, creating zombies (which later spread to what remained of the Pigmen, too). The Testificates had always been primitive are are also slowly going extinct from the monsters.
By the time the game starts Steve and Alex are the only humans left.

Yeah, maybe it is. But I think it's fun to create these sorts of stories, and Minecraft just throws so much potential at you lore-wise.
what about vindicators and the under sea ruins?
Vindicators/Illagers are a separate race of Testificate that evolved after the collapse. There's a sort of Indo-European/Old European thing with them and the Villagers. The Vindicators are pastoralists (evidenced by their taming of Ravagers) and they raid the pacifistic proto-communist agricultural settlements of the Villagers. The Vindicators are more skilled in magic and warfare, but the Villagers are more skilled in machinery, farming, and toolmaking, which they use to build the Iron Golems. Because they are pacifists they will not ever fight against or harm anything directly, so they rely on their powerful Golems to do that for them. So they're sort of like Old Europeans mixed with Jews, also being merchants.
The Undersea Temples were clearly made to worship some sort of deity, perhaps Notch or Jeb. Since the drowned are so prevalent, and normal zombies can become drowned, I think that because there were many different human civilizations all interconnected, some of them had to have been underwater at least partially, evidenced by the other, more common Undersea Ruins. The Guardians are artificial life forms created using magic to guard the temples and the sacrifices of wealth (and maybe humans/animals) made there.

And for Herobrine I'd like to think he's related to the creation of Minecraft But no one source tells the same tale(Notch's brother, random mod, isn't real) but he is around but slowly he started appearing less and less. Maybe it's because enderman started showing up in the overworld. Maybe it's the death of the enderdragon. Maybe it's just cause more and more people start watching out for him cause his tale is now spread far and wide. Who knows?

I think the player is supposed to come up with their own lore for the game.
They weren't in the game very long so I haven't thought about them much but my running theory is that her and Beast boy and the two others (I can't remember) were either created by the god Jeb or at least believed to be created by him. They're abberant mutations of humans, like albinos, who dressed in religiously significant costumes and playing big roles in religious life of at least some human societies. But because without human society their mutations tended to be a severe impediment to survival, they didn't last very long, killed off either by the collapse or just due to inbreeding. (I can't remember how long they were in the game)
The herobrine creepypasta is fun, if silly, and I've always enjoyed it. What annoyed me were people who would portray Herobrine as just a griefer or sentient computer program. That's boring. I've always thought of him as a mysterious god-like figure, since people back in the day would build those shrines out of netherrack, gold blocks, and redstone torches to try and summon him. So Herobrine is the fallen brother of the chief diety Notch, who is now cursed to wander the mortal plane forever pretty much, but it's only a myth and nobody can tell for sure if it's real or not.

My personal theory is that Alex and Steve are actually representations of Adam and Eve. In the context mode, Peaceful Mode is the Garden of Eden. They are free to roam and do as they please. They can be hurt, yes, but there is nothing malicious out to get them. The game's Creative Mode is a representaiton for their God-like aspirations. Just as Adam and Eve wished to be equal with God, Alex and Steve become try as well. But even with Creative Mode, they are still not all powerful. The "God" of the game is found after escaping the End, when disembodied voices discuss the player's ascension. Finally, after being cast out of Eden due to their Creative ambitions, we have normal Survival Mode. The default. They must fight to survive, because God is no longer on their side.
That's a pretty cool interpretation! Lots of fun stuff you could build around that. The "God" of the game being Notch (and Jeb), I assume?
i'd like for them to actually try to add herobrine as an april fools update one day. could be interesting if they did it nicely.

oh yeah, that would be fun! the development notes would say at the bottom "Added Herobrine", instead of "Removed Herobrine"
Typically I try to take sources only from the game itself and it's development history, but it could be useful as a way of giving ideas or supporting certain concepts.
