i assume he only said that because his honor was insulted and he wanted him to find a shittier potion seller whose strongest potions would be weaker. potion sellers take a lot of pride in their craft, and for them making the potent potions is kind of like an artform and a way to show off their skills. by telling the potion seller to give him his strongest potions, the knight was essentially saying "your potions ain't shit anyway, so just give me your strongest stuff". the knight was likely ignorant of this vocational pride and only enraged the potion seller more in their conversation
