How am I supposed to get all soul cores if there is no way to tell which ones you don't have, and only certain enemy placements are programmed to drop their soul cores?

Honestly the hardest levels in this game are the NG+ Dojo missions, especially the ones with Shisenin, Jesus Christ

any youkai enemy can drop their core, except the spiders
the drops are random, it has nothing to do where the enemy is, except in the first mission

If you can remodel any weapon to focus on one stat, then what's the point of making builds? and what the hell do you put your points in anyway? stamina?

every weapon has 3 stats you can chose from.

I'm just glad I get to use a Switchglaive without dumping loads into magic

It still has to be one of the three stats it naturally scales off of, so dump points into whatever is optimal.
Right now the most universal build is Stamina/Skill.
Works for everything but tonfa

I don't believe that second part, I have had times where I geared up to get as much soul core drop rate as possible and farmed a specific enemy for 30 minutes without any drops. It must depend on where they are or in what mission.

you can remodel two stats to A-, so if you want to go for damage then heart/skill, if you want B agility in heavy armor then skill/stam

Remodel it twice I assume. You get x2 of the materials needed by just running the Enenra mission in NG+

Note that some weapons can only reach A- and B+

Best I can reccomend is either Yokai Slayer or Tosa Governer since they're both light armor with general set bonuses that apply to any weapon
