Having finished the game, it altered basically nothing. All the big beats are there. Only things that are different is that Biggs survived, Wedge might have survived and Jessie is unclear due to this.

The time ghosts are wardens of the planet representing destiny.
Every time the game threatens to break with canon (Cloud nearly killing Reno, the Avalanche people not dying, Sephiroth killing Barret), they stop it because the planet won't allow us to break from Destiny (aka the plot of the original game).
The final boss is literally these ghosts. By beating them, the remake is now off the rails which is shown by Zack having survived Crisis Core.

Having Sephiroth in all of the advertisements for this game made it very clear that this was never going to be a faithful remake.
Revealing Zack and including a ton more content with Sephiroth massively changes the pacing of the game and goes directly against the concept of bringing the game to a whole new audience. People who play this game without playing the original won't get the slow reveal of how powerful Sephiroth is, or what an oh shit moment Cloud remembering was.
