What makes it difficult? Protip, the game doesn't tell you this but if you hold your top face button the camera will follow the target you have selected, makes dogfighting way easier to follow

user remember a few things, planes will try to dodge and lose your lock-on, try to get them at an angle where you look at their engines. Patience and remember those high G turns by holding accel and decel.
Play in 3rd person so you can see your plane and where you are easily.
Hold triangle or Y for xbox to lock your camera on the enemy, it helps you with distance and to see where you actually are compared to them.
Try to slow down when you're making circles around another plane and dont feel weird or bad about switching targets.
After a few missions you will slowly get it and get better at it.

Now that I think about it, a tunnel would likely have something akin to the ground effect which would make a smooth flight like that impossible. Or perhaps pressure would damage the aircraft as the air cannot expand enough for the super-sonic aircraft. IDK, I'm not an avionics expert. It just sounds dubious to pull off.

7 wasn't that good. About the same level of bad storytelling as 5, gameplay is OK but the bossfights just suck.
They honestly should've been squadron battles like in Zero, 1v1s just end up you lobbing missiles from midrange while the AI derps around trying to do fancy PSMs which just result in getting hit. Reminds me of the Night Raven bossfights in Electrosphere and those were pretty shit too for the same reason.

Though I really wish the series stuck with AC3's heavier and more inertial flight model, AC04 removed a bit of inertia and made the planes a bit zippier but the feel was still there. Then 5 just removed all depth from the FM and made it more like Rogue Squadron.
