Keep in mind, rolling AWAY at that close range opens the back for a backstab because, admittedly, DS1's backstab hitboxes are rather large
You know what he could and should have done? From second 2, he can see that an enemy is waiting on a ladder. Even a single throwing knife or arrow would cause that enemy to change location, preventing this chain of events from happening in the first place

DaS1 is the easiest Souls game without handicapping yourself. The only times you can legitimately die when you return to it knowing whats ahead of you is from falling in a few shit ledge segments/bed of chaos. Otherwise it is a incredibly easy game where the first few levels are the only time shit even hurts with again not handicapping yourself.

is it possible to make a game with gameplay like Dark Souls, but doesn't rely on i-frames for dodging? I've a huge fan of Bloodborne, the various Souls games, etc, but even I see i-frames are trash. I know Sekiro was like this, but that sort of fast paced always on the move combat I don't think would fit
you have to have bosses that are huge so you need to actually move by strafing or sprinting or ones that are your size so blocking is viable. rolling against a boss is fine but when they are just large humanoids or supersized animals they are not big enough/slow enough to run from and/or their attacks are too powerful to block safely. funnily enough a lot of them can be parried. rolling is super easy and it makes most bosses (especially in 3) terrible

sister friede and gael are pretty hard DLC bosses, but gravetender greatwolf/champion's gravetender are easy as fuck.
it's simplistic and every boss is defeated the same exact way: learn the dodge timings and chip away at it. baby's first souls game, although maybe that title goes to Sekiro now.

It offers more weapon variety than the Souls games, and is significantly more artistic than any of them (thanks to the story and the atmosphere), not to mention that it has the best level design in the series since so many of the levels are branched-out
The only taint on the game is the chalice shit, but that's all optional; I guess another bad thing about the game are the nightmare areas (nightmare of mensis being the worst)
In any case, it definitely deserves to be experienced, just like DeS and DaS1

your moveset being more complex doesn't change anything, it just means you have to attack in a way that is inconvenient and must adapt your play-style to suit your weapon's attacks. the enemies do not respond differently based on different weapons, the only exception being some weapons can stagger, and some can't. just pick the ones that stagger since you are missing out on utility otherwise and the game no longer has variety. every build plays the same and no, the levels are not the most complex. First half of DkS1 will always be the series' best level design.

You're delusional because of your obsession with the metroidvania design. If we look at each of the areas in DaS1 individually, almost every single one of them is mediocre. The exception is The Painted World of Ariamis, which is to this day the best level in the entire series.
Though I do agree that the first half of DaS1 is more complex than Bloodborne in a sense that you have to navigate a world, think about the fastest way of getting to a place etc.
On the other hand, it's not like that is really complex or anything. It's not hard as the areas aren't that big and there's not too many of them.

The main areas of 2's DLCs are more branched out than literally any level in DaS1 with the exception of The Painted World of Ariamis
Also, DaS2 alone has levels with branches, e.g. No Man's Wharf or Lost Bastille
BB has Central Yharnam, Research Hall, Forbidden Woods (one of the biggest areas in any of the series and with tons of exploration and branches) etc.

i've played every souls game start to finish except DeS. Dark Souls DLCs are sprawl, especially Eleum Loyce. Even if Iron Crown is vertically aligned you still progress through it the same way every time, the same cannot be said about Undead Burg/Darkroot Garden/Undead Parish. No Man's Wharf is a pointless journey, it's faster to just jump to a roof after killing Pursuer and using a Fragrant Branch of Yore and bam, you didn't need to go to the Wharf to complete Lost Bastille. Forbidden Woods shortcut to Central Yharnam is redundant since you can teleport from the beginning of the game. Cathederal of the Deep is a dead-end level, which would be forgivable if it was as well-made as something like the Painted World of Ariamis.
Darks Souls is not difficult. It has a difficulty curve but once you git gud, it is no longer difficult. Unless the AI cheats or the game requires god-like reflexes in a random fashion, a single player game will never be difficult.

FEAR's AI cheats and uses wall-hacks, but people love the game since they reveal their own positions when they give callouts. if anything the game is too forgiving since it gives you slow-mo. if you opt not to use it is challenging to a first time player at least

Except literally all of your complaints (with the exception of the Iron Crown area having you progress through it the same way - that is true, but that just means the replay value of the area is worsened (and even that can be argued since you can forget about the game and replay it after a few years without remembering almost anything)) are about the pointlessness of beating the area (since you don't get anything noteworthy out of it), yet that isn't related to the quality of the level design itself

well, if you want an answer about the quality of the levels themselves. they're pretty bad, the only reason the arenas are challenging is because the game either ambushes you constantly (DS2) or spams an unreasonable amount of enemies at you (DS3).

I agree on DS2 having mostly bad enemy placement, but I don't agree on the DLC enemy placement to be bad with the excepetion of a few smaller segments of the second DLC and the lake area in the first DLC
