Incidentally, why do video games have such a problem with interiors? I've noticed this problem for at least the last 10 years worth of video games so it's not like it's even new. They make a cool-ass castle but you can't actually go inside to explore it. What's up with that?

Interiors are a lot more complex than just creating a pretty setpiece. There's a lot more nuance involved in laying out the floorplan than there is just designing the outside as a pretty shell.
Part of it is just the laziness involved, but part of it is also balancing between making it realistic, and making it engaging to play in/explore. Because real, practical living spaces are not actually that interesting to explore or play in. Lots of deadends because they're built to accomodate people living in it and moving from room-to-room to do daily tasks (tn: not combat or exploration).
