Old Man Kratos has way more experience and defense
Their Strength evens out with old having higher highs and lower lows and young being more consistent.

What's more important is the actual implication of this fight.
If old Kratos wins against the wild specter of his past he'll finally let go and be at peace.
If Young Kratos defeats this weak and old vision of the future he will prove his strength and stay on his path of destruction.

Old Kratos is already at peace with himself by the end of the game

He pulped and mutilated several deities much stronger than Baldur with practically his bare hands. Being unable to die or not young kratos would have ripped his limbs off and tied them into a pretzel while kicking his stump of a torso into the ocean. Pop kratos failed to fully neutralize him even after fully knowing that he would keep coming like an asshole.
The real mythological answer is that Frigga flew around creation and swore every single thing to never harm him except she overlooked a mistletoe thinking it was harmless. From the in-game perspective he's basically cursed to not feel anything or to die. However Kratos 100% snapped his neck meaning he can definitely sustain injury that can incapacitate him for some time.

desu that kind of makes the game way dumber thematically. Kratos being an old and busted father is cooler if he's actually, you know, old and busted. It'd be like if Logan featured a Wolverine who was stronger than his younger self, it'd just kind of run completely counter to what the film is going for.

And he also has problems with satyrs, skeleton legions and cyclops. Baldur's curse negates injuries like that having a snapped neck meant nothing to him and everytime Kratos attacked or mutilated him (before the curse broke) he was fine. He'd either regenerate or crawl to his limbs and reassemble himself.

Well, he can do that over several months starting from the inside of a giant squid and many, many crabs.
Beyond that, are you trying to conflate gameplay with story canon? Working on Kirby rules until proven otherwise makes this much simpler a comparison: all player fuckups are specifically that and the actual Kratos was relatively untouched and unchallenged outside of cutscenes and mandatory sequences where those things specifically happen.

Most of it is him holding back to not show Atreus he's a god. When he's actually trying he easily overpowered Baldur, Baldur was basically just cheating with high regen, and Baldur is the equivalent of an Athena or Ares in terms of the heirarchy.

Old kratos is stronger cuz he has a healing power in gow4 that isn’t in the other games. he uses it during a few cutscenes (after baldur fight for example)

In-game not much, but we know lore-wise both Kratos's have high tier strength. Younger Kratos was able to physically overpower both Atlas and Cronos' grip strength, and overpowered Hercules who we know did most of the 12 labors, including (presumably) holding up the world in atlas's place for a short time. Old Kratos can easily overpower Magni and Modi, and fight in a realm that even Odin is stated unable to survive long in. He also keeps up with Baldur, who is the God of Light amongst other things, if irl lore means anything. It's honestly much easier to discuss the differences in equipment and magic than deciding older Kratos is weaker just because he has wrinkles and a bigger beard, meanwhile Zeus and presumably Odin are old as fuck and we know how powerful they are.
