Anniversary edition isn't on the PS2, get it for the PS4 or pirate the PC version and see what patches can fix R*'s fuck ups at pcgamingwiki, mainly the 30 fps lock.
The Schoolarship edition since it has more content. The playstation versions never got a definitive version for some stupid reason
