They completely waste their setting, they introduce vampires halfway into the story only to immediately kill them off, every single character is unlikable, Galahad is dreadful and even pulls off a Dark Knight speech at the end of the game as if you even care about him, the story is a complete mess, despite having a ton of collectibles they barely flesh out the world itself, barely anything about the Holy Grail drink is really explained, you feel like you're constantly being shuffled around in a straitjacket of linearity that you occasionally break free of for some shootouts, and the worst part about it is that a 100% run of the game (I.E. the platinum) is less than 5 hours long. You can beat the entire game in an afternoon.
The only people that really enjoy the victorian aesthetic are cringe endusing kids that wear a top hat to school and probably go on reddit. Ive seen a few in person

Architect here. Architecture design follows the tools, necessities and knowledge avaliable at the time with some inertia until it catches up. All the "proper" architecture examples you're posting were built in a time were they were exhausting their own style because architects got to a stagnating point where they did nothing but gravitate towards and from Vitruvius who was an ancient Roman Greekaboo himself. In the late XIX century this way of making architecture proved itself extremely limiting given the tools avaliable and lots of mediocre cookie cutter buildings were made in that style.
There's lots of worthy knowledge in the ancient architecture that still applies, but just copying it as is became more vice than virtue. Also worth noting that the romans were extremely practical builders as far as civilizations go. They did not lose time with overdesigned façades for buildings that weren't very important and invented the first kind of concrete which they used in most of their constructions. If they had our tools their runs would look very different.
