Off the top of my head FF6, FF10, and FF13 have "god" as their final boss. FF6's was a clown who wanted to be god, FF10's was the most important religious figure of their world, FF13 wasn't actually "god" but had religious themes, was responsible for maintaining the world, and wanted to sacrifice humanity in order to see the real God of their universe (Bhunivelze)

A god is still a god, I'd say. Everything before the apotheosis is irrelevant. On the FF universe there's not a God, as you say, but multiple gods.
