Eva's strength was fucking with the audience and the original episodes had no need for a remake. It also trolled people hard and made them angry on purpose. Also the recurrence of events was a plot point. FF7 was loved for its excellent pacing and presentation, and Nomura/Toriyama/Nojima honestly think adding time travel and raising stakes will make it better somehow.

Well they did always imply that Post-AC Cloud was set-up to have to deal with Genesis eventually. My guess is that in the next games, we'll actually get original Post-AC Cloud appearing, just like how we're getting original Post-AC Sephiroth here after Cloud beat him again.
Not to mention they managed to sell sephiroth as even more threatening because not only is he wiser from his defeats, he still has the ability to summon meteor whenever he pleases.
He even basks in the nostalgia during the boss fight with cloud by saying "Ah the memories!" and shit.
