Did vanilla DS2 even have good bossfights? Lost Sinner was decent and Smelter/Old Iron King are at least memorable, but I wouldnt really want to call them good bossfights.

Nah faggot, I think it's a unique take on designing a "hard to predict" move. Every other "hard to predict" move is either a combo extender or has a prolonged windup to bait early rolling/parrying. Both of which has been done to death, especially in Sekiro.

Why is simply "hard to predict" your basis for good gameplay? Instant animations without telegraph are indeed hard to predict, as you said, but I really don't see how that is engaging to play against. Which is why I brought up jumpscares; they're both just cheap surprises that catch the audience off-guard and retards get pleasure from experiencing that.
That Heide Knight attack punishes the play for no failing on their part, whereas a properly designed "hard to predict" move should punish the player for a mistake they made. Such as the prolonged windup moves you referenced; they punish players who just instinctively roll or parry the moment the enemy does anything, rather than waiting for the attack to actually be unleashed.
This is the only good fight in DS2.

Heide Knight's is technically telegraphed (the knight standing still for a few seconds), it's just impossible to recognize if you don't know about it. Yeah it's admittedly cheap the first time, but it's not like there's absolutely zero windup to it. It's also only one swing so it's not too bullshit.
You're right that the typical prolonged windup is more fair than Heide Knight's, but I like it because it's a pretty unique twist on it not seen in other enemies (admittedly because it would be annoying if more than one enemy did it). Also because it's very satisfying to parry.

Demon Prince, Midir, Gael and Fume Knight are better. Orphan of Kos and Gehrman are better than any Souls boss though.
