Pretty much every mythology has a ton of monsters.

They had a culture that saw the supernatural all around them, that the eight million kami dwelt in every blade of grass and every star in the sky. As a result they had some pretty vivid imaginations and lots of poetry.
Also they didn't literally burn their history like China did.

Some japanese monsters are shared with China, but japanese just have far more of them.

For example, Korea and the Celtic mythology.

A lot of European mythos got lost thanks to the knowledge troves getting destroyed during wars or purges. You could say that Asians simply preserved it better.

In all recorded myths, there was only one small sentence of a dude being tied down by midgetey midgets dragging him to sea. No other actual naming of the word leprechaun or anything. It was "invented"(more like adopted) as a mascot once the Irish moved to America.

The red ones are sunburned from shipwrecks and thus appears red. The blue ones are just an interpretation of normal white skin, appearing blue. Personally I think shes full of shit, but who knows.

Stories develop. There's like a hundred grass entities so I don't think overlap is uncommon. Most myths start as a story to keep X demographic from doing Y thing. Like kids from going into the deep forest

It's a damn shame but monsters don't sell. I'm still hoping we get some in the future. We barely have any Japanese anything in SMITE, and what we do have are very well known gods.

I seriously doubt anyone on a board dedicated to video games can give a cogent and simple explanation for something so very specific like that. Why did the Greeks believe in the very specific pantheon they had, or the Egyptians? The numerous cultural, geographic, environmental, perhaps even genetic factors, that all amounted over a great period of time, happened to produce one novel mythology over another. There is probably not a single point you can say; "This is the moment the Japanese invented so many Yokai and this is the exact reason they did.".
