I think the Little Ghost and Hollow Knight's story were well and fully told. Hornet's the only one left to really go anywhere new with things in the end.

That's true, I was talking from a gameplay perspective. Pure Vessel has such a nice moveset that I really want to play as him. Also he breaks out in the pantheon of Hallownest ending.

I want her to hate it at first, but grow to love it by the end. Her whole life has been about honing a weapon to guard her parent's dead legacy. Let her broaden her horizons.

Similar to how Zote uses the Life Ender, but obviously Zote doesn't do damage in his non-dream fight so it'd be very weak when used by the player when compared to the weapons I mentioned.

that's actually a good question, i assume hornet is older but might not have a lot to back that up.

She's just bigger. Well think of it this way. Protag is a failed vessel, but HK is the "good one". Hornet had to have been made afterword because it only makes sense that the Dreamers would go to sleep after the promised vessel was actually created.
