Mario Kart 8 Deluxe, Tetris 99 and Ultimate, and Ultra Street Fighter 2 are on Switch. Hell Tetris 99 alone is fine. To answer your question, A. carts are more expension than discs and B. Nintendo games are evergreen titles, meaning people years down the line are still purchasing them, hence Nintendo keeping them at $50 or $60 for years. PlayStation and X-Box games (third party basicall) make 90% of their sales around launch, and then fizzle out after that. Which is why they drop to like.... $15 dollars two months later. It's all about supply and demand

It's nintendo's marketing strategy. The lack of price drops for their 1st party games has a few effects that probably help their goal of achieving sales:
Since people don't expect a price drop, you don't see as many people going "ehh, maybe I'll pick it up when it goes for half price in a few months" the same way you might see with PS4 and Xbone releases. So early sales might see a bit of a boost that can make up for any loss of sales for people who would never buy teh game at full price.
Also, Nintendo games do tend to hold up over time better I find. It's not to imply the games are any better than games on other systems, but there is something about the experience of most first party titles. For example, I think if I were to have only just bought breath of the wild today, I would still have the same blast that I did when I bought it 2 years ago. I think nintendo games just aren't contingent on being the flavour of the month as much as some other titles are if that makes sense?
Because the games base price barely drops over time, it also means nintendo can always give sales an easy boost with a quick flash sale too. And there is the whole "Nintendo Selects" series that do see a reduced price for certain popular games.
I think to summarise, Nintendo seem to treat their games more like assets than consumables. Their games typically hold better resale value as well and, if you hold onto them long enough, they're almost all guaranteed to end up appreciating value again. Pokemon is another example. Even the cartridges for the DS era games now sell for more than their original retail price preowned.

2. They won't cut the prices for their big games nor release demos because they want to uphold their "Disney/Apple of video games" status.

They know people will still buy because of the brand name, any studio could avoid sales but that will only prove negative for them because they're not Nintendo, they don't have a loyal userbase.
It's why unfortunately this has proved negative for other developers, who are subject to the Nintendo tax but to none of its positives which yield NIntendo money.
In its third year of life, with a bit of naive distribution, Wii owners had about 10 titles each (300 million titles for 30 million owners), DS owners too, but it's 2020 now and Switch owners have just five or six - probably BOTW, Mario Kart, and some other shit. The exclusives, because environmentally it has become a first party console and not a multiplatform one.
