practice, try to enter the fight with as many lives as possible and learn the stage itself well (know what to do, when to bomb, when to collect score for extra points etc.)
Also watching videos helps for spell cards that give you trouble.

There's memorization involved as well. Depending on the game there's some other mechanics. Older touhous don't let you collect shit at item border until you have full power for instance. Other games may do weird gimmicks on resource collection like UFO.

I would recommend Embodiment of Scarlet Devil, Touhou 6. It has simpler game mechanics and more straightforward attacks than the latter games. Don't expect to be able to clear it in one go, this is the kind of game you practice. Touhou 15 is honestly also a good place to start, since it lets you repeat a chapter over and over until you get it.
