Mount & Blade. You can potentially become a king if you build up your income and an enough of an independant warband, but you can also spend the game as a mercenary captain for one of the other kings.
Freelancer mod is especially good for this if you want to just be a front line trooper for a while.

You can even get a vassal-ship, and then disband your army, or leave it at your castle, and just be alone in big battles between bigger powers.
