Dragon Quest 7 is also excellent, it emulates extremely well on Citra especially if you increase the resolution multiplier. The story isn't the strongest of the series, but the job system is where the fun is.

it's not strictly random i guess but chrono trigger has many mandatory battles with normal enemies as you go

this is a good list. I'd also add these:
Chrono Trigger
Chrono Cross (has a lot of flaws, but has great music and a lot of soul)
Earthbound
Mother 3
Bravely Default/Second (they do have random battles, but you can adjust the frequency of battles in almost every dungeon. so if you want you can completely turn off battles when you want to explore, and then crank it up to maximum frequency when you are ready to grind)
