It's because of segregation, in the USA ethnicities and cultures tend to segregate into communities, which works against people integrating and assimilating into the general culture.
Not saying the opposite is good, it's just the reason this happens.

Technically, but gender is fairly loosely tied to sex in German anyway. It's more of a linguistic construct than a biological one, given that things like the most common word for "girl" is neuter (Mädchen) and animal terms have a generic gender that doesn't necessarily correlate to the sex of the animal.
Given that the term "gender" originates in grammar constructs, having more than two isn't surprising. Latin had masculine, feminine, and neuter as well. Most gendered European languages have three genders, because Proto-Indo-European did.
