When you meet him in Blighttown he's near the Great Hollow so I'm almost positive they moved the parts of his quest around because it would have been silly to save his life and then later have to give him purple moss.

He was up against some things that he wasn't able to do/would royally fuck him up at first (Sen's gate, the boulders), but because you help him so much he underestimates himself, becomes dependent on you, and only really shows bravery if he's looking for an excuse to kill himself for feeling useless.
Dark Souls NPCs are stand-ins for the kinds of players that play the game. Siegmeyer would be the guy who might be able to play the game if he hadn't summoned two people to do it for him.

I decided I wanted the Ash Lake ending for him, so I carefully planned this section to kill all but one Chaos Eater, let him get into it, then kill it before it could knock him below 50% health. When I went to talk to him, he decided to just fuck off and carry on living. Not sure what the hell happened but honestly I'm happy Onion Knight lived to see another day.

Titanite slabs and demons are associated with the blacksmith god. Sieglinde gives one because she's part of the rebellion or at least knew that her mom was, but she gives into despair when her dad dies.
