It's only ever going to be autists who use the broken shit and then complain that the game is unplayable any way else. You combat that by just ignoring them.
It's more like dodge five times and then do a mid stance dodge>roll, it's a really easy grab to avoid when you know how to. Probably shitters dodging backwards into the path of the grab.
Except that's not fine at all when the game is entirely designed from top to bottom around the Ki system. The system based around allowing you to drastically increase your damage output by keeping up heavy aggression or well timed attacks. When you both have low defense none of that matters to the degree it should, either you die immediately without any investment into damage reduction (which people already had issues with that caused all these changes to begin with) or mow through things without paying attention to it, or you pay a little attention to it and any interesting combat scenarios that could arise from it don't even exist because the damage overflows too much. You have to design these things based on how the game's mechanics actually work, not just on such a blank slate of a comparison. That balancing works for Souls games, not for Nioh when you have far more at your disposal in terms of combat.

Nothing in the game even approaches any level of tedium if you had only learned to just use anything the game presents you, and you're actively just saying you don't want to play the game at all, so the game should be devolved to let you play as little as possible. So don't, and let the people who want to play the game enjoy it.

The attack isn't so great but the passive it gives are bretty good if you know you're gonna get hit and use extraction talismans. Pretty sure it was designed for axe users.

Nagamasa was in a bad place but Oda was utterly ruthless, Azai was a good dude but Oda was one scary fucker.
Besides that, there are very few good people in war and Nobunaga wanted people to stop warring A.S.A.P. bloodshed was inevitable.

What influences if you can refashion into something? I can refashion chest pieces into the flying Kato shit but I can't do it for the gloves or helmet

If you acquire the item, you can refashion into it. Chances are, you beat Kato and he didn't drop the gloves or helmet for you. Also, items you get from revenants don't count.
If you're being one shot from full health something is wrong with your gear
I've thought about that for that reason and took it with me with my 358 giga thundercokc toughness build and noticed all of a few points being removed per attack. I'm sure it'll be better with larger numbers to work with, but it seems very not good. Then again all of that stuff is very not good when compared to Tengen Sujaku's god buffs.

There's nothing wrong with tracking. It just means you should be blocking, timing your dodge better, or getting out of the way entirely.

Probably unpopular opinion, but I think the game really should have dropped Hide’s connection with the Saito and start the game much later at around Kanegasaki or something.
That way, the story of the first few regions could be more tightly developed instead of being so disjointed like what we got now. And maybe we could get some cool stages fighting against the Takeda and the Uesugi instead of just fucking around in the first 2 regions.

The starting point was fine but I agree dropping the connection to Saito would be for the better.
It feels like we should have been spending more time with Toki in cutscenes or in some missions that we have done.

Namahage got a bit of a nerf compared to how it was in Nioh 1. Where in that game he was an unstopplabe killing machine
I was going to get the first game but I really just want Elden Ring and I want to starve my fix unless that game comes out. Or unless Dark Souls 2 comes out on the switch I would play that there.
The fact they are literally just an aberran soldier but with a demon head yet have as much health as a mini-boss is so annoying. They also don't care at all about your attacks unless they are completely out of ki.

The yokai weapons from him have some interesting shit to say anyway. Mostly in how much they fucking hate kids.
Just like with 1, the game really expect you to already be familiar with the Sengoku period so they wasted no time explaining who is who and what is going on and that can makes it really confusing to newcomers. Which is a shame because I think the games do have good stories and characterizations deep down (1’s Osaka campaigns and 2’s 4th region onward)
