Yes in general, skill is more important than strength. But only if the skill gap is great enough and the strength gap is not to huge. There is a reason why there are wieght classes in most sports.
In Jujutsu, part of what we do is throws, which relies on breaking your oppenents balance and timing. So using your opponents size againt them is something we do all the time. But again. If you go up against someone large/strong enough. You can literally just brute force you to the ground without using any of that. And he can also stop you from breaking his balance simply by holding you at arms length.

You won't be able to put the necessary thought and attention to it, if your opponent fights back for real, it just turns into wrestling, and if that's your thing, you should learn actual wrestling instead.

I agree with you on this. Most kansetzu waza takes a really long time to get any good at. But this is also true for throws. And we use them with real resistance all the time. As does Judo.
The problem with most aikido dojo's is that they never do that. They never go past training the technique itself. Even the randori tends to be semi choreagraphed. I do like some of the techniques though. Kote gaesh and kote mawash I use fairly often. But mostly on the ground, as the risk/reward ratio is way to low on your feet.

You never lose to Boss outside of a cutscene. Furthermore, Snake gets a little better at fighting Boss every time they meet. Lastly, you can actually beat the Boss when you finally face her outside of a cutscene.

In the case of Nadine, it's like you said. The game scripts her to be unbeatable by sabotaging the player. Players aren't allowed to be the same Drake that they play as in every instance of gameplay where Nadine isn't present. And he's not even injured or anything. The game turns off the normal gameplay mechanics as Nadine punches Drake over and over. The player never gets to beat her normally and have some catharsis.

In both MGS and Uncharted main character can beat up guys several times bigger than themselves and yet a woman can beat them up.
Now in MGS you are beaten by your mentor, the person that teached you everything you know and the person that fully knows how you fight and every time she beats you it's by using CQC techniques and your hesitation.
And in terms of whole narrative it is used to build her up to make for better final boss from narrative standpoint.

Moving to Uncharted the woman that beats you up is some literally who that just straight up punches you with raw strength, no special tricks and somehow the protagonist who could beat several guys that relied only on their strength couldn't beat her.
On top of that while I can believe it in 1v1 scenario it was absolutely ridiculous when you were fighting 2v1 her and yet you struggle despite her not doing anything special or interesting.
And it's not used for any build up or anything like that, she just beats you up and there's once again nothing interesting, logical or purposful about it.
Literally all they had to do was give her some martial arts or whatever, add some rule of cool since as it is it's just bland and uninteresting in every way.
