Despite its relatively small world, no other game really gave me the same sense of wonder when exploring around.
It's a fantasy adventure in its purest form, with fun gameplay to boot and a few curveballs at the end.

the gameplay is janky and focused mostly on sandbox stuff, but there is an actual storyline and its cool as fuck. You get minimal help with anything, and I really do mean minimal, you're told what you need to look for and roughly where to go, but there are not map indicators given to you, no paths, nothing but names and locations that you need to find yourself. the dungeon crawling is equally fun, as once again there is almost zero help with what you need to do, plus the atmosphere is generally just cool. If you can get past the janky play, then its definitely one to try out.

I felt like it was a empty world though, with barely any quests or much to do, and I'd say I got pretty far with a mage character. Got as far as the poison marshes, after the big town reunion thing.

I think you can just play first person in the game without mods but I've definitely seen first person screenshots. (3rd person is better IMO)

I find metroidvanias fun for that, hollow knight especially. Also botw, but that exploration can get repetitive.
Sea of Thieves. The Adventure is what you make of it. Treasure hunting? Skeleton fighting? Delivering shit? Fishing? all viable. But you can ignore that, gather supplies from where you spawn, drop sails and cast off for whatever happens.
Maybe you'll have a quiet voyage of collecting junk from sunken ships and shore lines and doing emergent quests? Or hunt for Megladons and Krakens to fight for treasure and precious meat.
Or maybe in the middle of all of this you'll meet another ship of players, sometimes friendly, most the time not, and do PVP battle against them for your survival!
