I've only played sophie, firis, lulua & ryza, the latter two were utter shit, sophie was pretty good, and I enjoyed firis but didn't finish it because it ran like shit in my pc lmao

Hard to say. You've never played one with time limits and I think Ayesha is the best game in general, it has time limits so it wouldn't be a bad choice for your introduction to that style of Atelier.
Escha & Logy stumbles in places and would've unironically worked better without the time limit because they're so large that instead of making you feel accomplished for finishing stuff within them, they stress you out because you quickly run out of things to do and you have to accept that you should just skip the rest of the available time.
Shallie is a proto-Sophie in some ways and removed time limits, I think you'd like it pretty easily.
Unlike the other trilogies, Dusk actually has a running storyline and I don't suggest skipping any of them if you're going to play it.

I dislike the time limits in the Arland games not for their own sake but due to the obnoxious ending conditions needed to get all the endings giving you way too much shit to cram into a single playthrough without just downright following a guide, which I feel compelled to go for with my completionist autism. Having an ending which requires you to have the conditions checked for every single other ending simultaneously was a terrible idea since you can't even go through them bit by bit on multiple playthroughs. I feel like there should be some better ng+ stuff too.

Yeah, you should just accept you're meant to do the best ending on a second playthrough and with a guide. Meruru actually locks it until NG+ anyway.
I feel Ayesha did it right although one of the requirements is sort of bullshit. Nothing on Arland's level though.

Personally I think Totori has a much better and more involved story even though the pacing is whack, and it also feels more like an adventure. Meruru has much, much better gameplay though and a much higher density of events. I feel like Ayesha took the best aspects from both games with a ton of events and things to do but also a good plot and the feel of an adventure.

I like the start of the game, Totori's family situation outright caught me off guard after Rorona was all sunshine and rainbows. After that it's a bunch of nothing for the next two years, but I think once the quest to build the boat begins in year three, the pacing picks up and is done well until the end of the story. A mixed bag for sure, but I can see what they were going for.
You didn't play Lydie and Suelle? By far the best versions of Sophie and Firis are there. I almost cried when Sophie appeared, even if her appearance was predictable as hell.

Firis going from obnoxious to at least a somewhat cute shonen character was good too, and the witch's teatime ending for meruru is the best one by far

She really does, but it's worth it because she's a total semen demon in Shallie with those wings.
I can't complain, it might be because I like her but I feel like it's one of the few times where a side character gradually hijacking a series is done decently. Though the way her quest to make pacts with the elemental spirits balloons in importance in Shallie does feel a little weird with how important the Water Spirit turns out to be to the lore of the world of Dusk compared to the previous two who where just sort of there.

yes
it's unironically one of the least sexual games in the series
She's okay, a little generic but it works for the setting. She and her friends have lived all their lives stuck on a boring island and they want to go out to the mainland and explore. They get in over their head but grow up through the experience, pull through and end up accomplishing great things. Ryza herself is the stubborn one of the group who will drag the others along even when it's sort of reckless, but she takes advice to heart.
