DS1 is slow enough to make any and every build viable. DS2 builds on DS1 and has increased variety and the ability to respec but with gameplay being more clunky than DS1. In DS3, if you're not playing a 1H R1 spam + roll DEX build, you're purposely gimping yourself

The first half and the end of DS1 is good. I don't have rose tinted glasses over places like Undead Burg, because they were genuinely good.

Undead Burg is literally the only great place in the game and I feel like not even that is actually good but only seems good in contrast of the absolute cnacer that comes right after.

Painted World is actually a good area.

It is good, it was designed pretty masterfully. There's plenty of secrets to find, and they structured it pretty cleverly. I'd say the same about The Depths, New Londo (yeah, everyone screams about falling and no bonfire there, but fighting the spooky ghosts was fun, and it had great atmosphere), Sen's Fortress, annoying as its traps were, was an alright place. Could have been better, but overall I enjoyed it. Undead Parish was alright. Although Catacombs had annoyances that could make it unfun, like having to fuck around with bridges and levers, ultimately, like Undead Burg it was a well crafted area with a decent amount of secrets to find, lots of hidden passages that were cleverly placed, and it had those cool wheel skellies. Only thing that truly sucked ass was its shitty boss that died like a bitch. Darkroot Garden was.... okay. Nothing to write home about, but not a BAD area.

DS1 still has the best overall feel and atmosphere, it's a shame that so many of the areas in the game are shit. Still a better game overall than DS2 or DS3.

I played Bloodborne and sekiro first. Making my way through the DS trilogy and just beat grave lord nito. It took me some time to get used to the combat but it has been enjoyable so far.
