The roll is to get you away from AOEs. It's not like Kingdom Hearts or Dark Souls where you can no-damage fights. You will take damage in 7R, and have to use your tools to minimize it. Aerial dodge also doesn't make any physical sense unless they add a magic materia for it.

At the very least, Tifa still has a distinct design that is immediately recognizable as the original character, even if they took some liberties with it.
You could drop new Jill into any other game and it would be very difficult to identify her as Jill Valentine. I don't absolutely hate the new design, but it is not iconic or recognizable in any way. They could have at least given her a white belt or fanny pack or something to keep her original color scheme.
