I can recommend Dracula X Chronicles (though Rondo itself may be better. I personally think the PSP remake is very solid like Megaman Maverick Hunter X was) and Super Castlevania IV. Really good games.
I'm actually playing Circle of Moon right now. Its a bit janky and absurdly tough in places but its still a good game. Feels more metroidy with all the heart, health, and mp expansions to find than most CV games of that type that focus more on equipment variance.

Yeah, the Souls games would be such a good blueprint for a 3D Castlevania. Remove the RPG elements, make it arcadey and you get classicvania, free up the movement options, add more exploration and you get metroidvania. Castlevania and Souls are practically begging to be mixed together.
