Am I missing something? Sekiro didn't feel that difficult to me at all. Is it just people who have never played a Souls game? Dark Souls 1 felt harder probably because it was my first Souls game. I can imagine the same for people who are playing Sekiro as their first Souls-esque game.

This is probably true, bloodborne was my first and only souls game prior to sekiro so I naturally went into encounters more aggressively and never had any issues, also being able to block whenever in sekrio made it feel even easier in comparison
But the combat feels like Souls but easier. No stamina, parrying, jumping. I can't imagine a Soulsfag having a hard time with Sekiro
yea i prefer slower blocking kindof souls games like demon souls or ds1 as opposed to rolling games like bloodbourne ds3 sekiro etc.
I mean i'm fine with hard games but rolling is something that i mentally and physically do not have the reflexes for.
When it takes me 6 - 8 hours to beat abyss watchers as opposed to beating gywn the first time it just proves there's something wrong there.
Bloodborne is literally easier though. You have a shitton of i-frames for dodgning and all the bosses are souls-type bosses that you win by dodging and punishing.

it was by no means easy, probably one of the hardest games ive played since i was a child but after sticking to it i got the hang of the combat . also i loved the game as a whole i would never have kept playing it if i wasnt so absorbed in the lore, combat and the general atmosphere

Kill the adds, then run away from Juzou to reset him. Then you can sneak up on him for a free deathblow. After that, go talk to the samurai. He should be able to survive long enough that you only have to get one more deathblow on him. Use the firecrackers too and remember to block or move out of his swings.
I went straight from playing Bloodborne and owning it to playing Sekiro and couldn't make it past the first mini boss, not even close. I conditioned myself to fail. Gotta try it again soon now that the wrong instincts are out of my system
what second stage? nothing changes between the health bars. git gud and learn what attacks you should dodge and what you should deflect. hint: jinzo is better fought by dodging his attacks and wittling down his health bar. his attacks are slow and easy to dodge back. he has a lot of long attacks that are easy to dodge and punish. he doesnt have much defense when youre behind him.

Seconding . Kill the adds in the room to the left, then sneak around the path and kill the add with a shield. Dash for the archer and kill him. Then run around killing the other dudes and staying away from Juzou. Lead them back to the left room and corridor if need be, and run away when fatty gets close. Once you've killed all the dudes, you can use the hallway to reset Juzou, and then get a sneak attack on him.

I killed almost every boss by depleting its health. When I found that he can't be killed that way I realized it was the end of the road for me.

I didn't have a lot of trouble with him, but some of his moves like the fireballs are just not fair. Also the game spends all this time teaching you how to not play it like souls then this guy shows up, and it's jarring. That's a long ass fight too, though one of the phases can be nearly bypassed by using malcontent.
Dont worry all the features we downgraded and removes from DS3 in 2016, because sekiro is so hard, I promise.

Well he's not the only boss like that. The Apes play quite similar, forcing you to dart in and out and mixed focus of deflecting and avoid attacks via positioning.
I never liked being forced to pull long timed chains on games (for example I never managed to get an attack chain longer than 13 hits on Vagrant Story).
I didn't like how the posture bar is intended to be the real health bar and if you don't pull the long timed chains (that I dislike) you will never deplete that regenerating health bar.
I found bizarre that attacking with your sword is pretty much next to useless (defeating regular enemies, bosses and minibosses took a long, long time for me)
I also found the tools cumbersome due to most of them having ammo requirements and knowing which one you're supposed to be with every enemy and boss a tedious trial and error task so I never bothered using them (well, maybe the axe against the shield enemies, and that's because the game tells you as much).

Sekiro is probably harder if you've played Souls games, since it's specifically designed to fuck over the skills that worked there.
Patience is worthless, because you lose posture, there's no "avoid till opening then punish", you've gotta go in headfirst.
Positioning is worthless, because everything tracks. You can't circle strafe around, or play around hitboxes/timing.
Blocking is actually good, since your posture recovers faster. In Souls you're conditioned never to block since it fucks up your stamina, avoidance is always better.

Before the gears started moving and I understood what it was the game WANTED me to be doing to fight enemies, it felt like it was way harder than anything else I've ever played in recent years. Lady Butterfly was where I actually understood how to play the game and that I'm supposed to be working against their stagger bars, not their health bars.
I haven't used a shield since literally my first ever run of DS1. They're such an unnecessary crunch that encourages a bad play style, it's no surprise that every game since 1 has gone further in making them worthless.

I've only played Sekiro for a few hours and as someone who's a pretty seasoned Souls player even I'm finding it very challenging to work my way through the areas. The biggest hurdle I've had to overcome was to not treat Sekiro as a Souls game, the way you have to traverse enemy territory, the use of stealth and the tug of war combat system throws all those old tactics out of the window. My major issue with this combat system is that there are no aura effects on the blades making it hard to work out what the enemy is going to do especially when you're attacking. I'm playing Sekiro on a standard PS4 though so perhaps this isn't an issue on say a PC running at 60FPS.

Most bosses have large openings that you can punish after specific attacks, for example when Owl Father throws firecrackers.

You absolutely can. For example, Emma and Isshin's grab can be avoided by circling around their backside. Many sweeping attacks can be ducked if the player crouches, too.

In DaS3, yeah. ! and 2 encourage the use of shields and tanking hits.
I don't consider myself impatient, or I wouldn't have spend a 10 minutes ordeal fighting Genichiro.
I simply didn't like the gameplay of that game so I never bothered to learn it, instead playing the game how I usually play action games.
The only thing that makes me butthurt is that I bought Sekiro on launch. $60 for a game I didn't even finish.
I thought it was still fun. I really enjoyed the fights against Genichiro or the Lady Butterly, slowly learning their moveset and slowly chipping my way through victory. I didn't enjoy the fight against the Owl because he only had one punishable attack (two but you had to risk having your healing disabled) and after that fight I started moving into other games and losing interest on Sekiro (the beginning of the year having a lot of games I wanted to play didn't help things.
The final drop came when Isshin's extremely aggressive attacks proved to be an unbreakable wall.
I can't imagine playing sub 60 fps. It would certainly make the game harder.
