Desaturated means lower hue value. Muted is a descriptive term for a desaturated color pallet. What did OP get wrong?

What he got wrong is assuming most people want that extreme saturation of the original. The new game has a normal, realistic level of saturation. The original was extremely saturated that gives it an unnatural, fantasy look. That would be fine if Animal Crossing was a fantasy game, but it's not. Honestly the original game's saturation reminds me a lot of anime.

I actually like the new color of the grass more.

"Extreme saturation" is more something like Blood and Wine or Shivering Isles that intentionally gives it a much higher fantasy look. AC on Gamecube is not the same thing.

OR MAYBE it's because TV's have gotten better and games are higher resolution so you don't need the same level of saturation to make things out. This is the stupidest complaint possible either way because YOUR TV HAS A SATURATION SETTING. You -can- make the game look like the original if you want to.

Because TVs were shittier and games were lower res so higher saturation made it easier to tell what everything was. We don't need that anymore. I hate BotW's graphics because of the faint foggy desaturated overlay the game has 100% of the time.

It's an indescribable visual effect, yet gets under my skin.
