Depends what you mean by "evil" because there are games where you play as Evil characters (Overlord, Dungeon Keeper) but those games are more in the "It's good to be bad" genre where the good guys are portrayed as dumb peasants and you're just smarter than them and it is much more comedic and silly.
All the Lawful Evil games I've played, you just end up killing everyone and missing out on most side quests.

Nah, it's more about the sort of character Shepard has in general which may in fact be a bad person. There's plenty of renegade shit you can do that is unrelated to the main plot. It's less to do with "This is necessary because Reapers" and more to do with "This is the way I think it should be and I'm not giving you a choice about that". There are, for example, multiple instances where you can achieve the exact same outcome using both a renegade and paragon approach and the only real difference is whether the opposition thinks Shepard is an aggressive asshole or a reasonable person who happens to have a persuasive argument. It's not particularly shocking that the general population considers an aggressive asshole who constantly threatens and uses force to get what he wants, regardless of whether there is an ultimate good to it or not, "evil". Modern society expects people to at least try to be diplomatic at first. And of course it's hard, for example, to paint slugging a female reporter in the face as necessary to prevent the threat of the Reapers. It really does just make Shepard look like a violent sociopath with a very short fuse and nothing else.

First I am gonna say that most of the side content in Mass Effect really makes no sense in terms of Paragon or Renegade. The fact of the matter is that most of it is literally wasting time. You're fucking around trying to decide if some woman's body should be used for scientific research instead of chasing the Geth. I will accept that many of the renegade side options can be a bit silly, but they're just as silly if you're Paragon and you really stop to think about the fact that Shepard is doing nothing but wasting time.
However, going to the main story (which is what I was primarily referring to) Renegade comes across as a lot more pragmatic than Paragon much of the time. Paragon has too much negotiating, too much posturing and tries to convince people of things when there is no time for it. Not only this but it sacrifices efficiency in the name of morals which sometimes makes sense, and other times is just flat out stupid.
Yes, it is cheap to say but Shepard literally knows better than any other person in the universe what needs to be done. Not just because he is the player character, but also because he has unique knowledge that no one else posses. He has to act to try and save everyone, and sitting there and trying to convince random people (not even important people, but random useless people) about it is totally pointless. They don't know, their opinion is useless, Shepard has to do what he has to do. Not only this, but as a Specter he is given the power to do it, and much of the time it feels like Paragon Shepard doesn't use all of the tools at his disposal.

While I do agree that many of them are too edgy, part of being an anti-hero is generally being at least some what edgy. That is kind of the point. You're not a traditional hero and you do things by your own rules.
Obviously anti-heroes can also be comedic and greedy like Wario, but that requires a pretty specific story to work. Not like you could take Wario (or at least his personality) and drop it into various games and it will work.

Well it's actually horribly hard to make game where you have both good and evil routes. Sadly most of Devs just focus on good route and then they slap some small evil route just to say "look, we have evil route" but it's basically "good route but more edgy" or "achievement route".
Both routes should be designed with effort. Both routes should have different kind of rewards and have different impact of world you are in (example, when you are evil you can get rewards that seems to be bigger but you won't be welcomed in some places(like better parts of towns) and so you lose access to some shops or helpful services), both routes will have different kinds of challenges and opportunities.

Indie games are where it's at for real evil routes. Let me share some plot from the last game I played. Boy threatens me, I plot to end him. I pay my fixer to steal his friend's phone, then use it to schedule a midnight meeting in our park. When the boy arrives expecting his friend, I ambush him and we brawl. I beat him mercilessly, he begs for his life, I decide instead of killing him to put him to work in a slave mine. Days later his girlfriend comes crying to me because he's missing, I console her, grooming her to make her mine. Later on a policeman visits me and discusses their suspicion I'm the culprit due to minor mistakes I made. They have nothing concrete so put me on notice and leave. Another day passes and I catch the boy's sister clumsily snooping around my place trying to find evidence I kidnapped him. I play it cool and pretend it's not me and offer to help her any way I can. She rejects my aid and promises she'll discover the truth. Another day passes and I get closer to the boy's girlfriend encouraging her to depend on me. Then a mistake happens and the boy's sister has discovered my secret, so the only option is to lock her up. I restrain her and lock her in a room, she'll be my slave now. She's resistant at first but under the threats of harm to her brother, she eventually obeys, and pleases me against her will. Now I have the boy working as a slave, the sister as my obedient pleasure slave, and the girlfriend emotionally bonded to me. Everything is great, except now the policeman is more suspicious and has put me on watch. I plot to end him as well, after all, I could always use another slave, especially one that can gain me access to law enforcement.

Hero will be allways meant to be good, flawless. Have honor. He won't disrespect his enemies and he won't play dirty.
Anti-hero can be a dick to others, be greedy, fight dirty. And flood his enemies with unhealthy amount of insults before attacking them. And he will do evil things when it will help him reach goals (but antihero is not evil so he won't do that kind of stuff just for enjoyment).
