You do realize that Dark Souls had a lot of weapons, right? Just pick what you want and go with it. You can always try things later to see if you like other things too. I like FROM games and Nioh.

In Sekiro you need to parry, in Nioh you can parry, use magic, ninjitsu, debuff, choose between many weapons with different skills and move sets, etc
