I heard a some people, that started wis ds3, that it's their favorite, as it is more modern, has some qol improvements etc. Others claim des/Das being their favorite, as the charm it had for them playing for the first time can't be recreated.
Most people, that don't post on Yas Forums, like each game for their individual traits.

That being said, I couldn't get the hang of ds3 for the life of me. But that could just be me being a shitter.

The boss fight, i love it. The music plays as the boss leaps into the sky slashing his sword while shooting his crossbow and thunder crosses everwhere or when you kill the boss, but he resurrects and his sword is on fire while the dramatic music kicks in, dark soul 1 and 2's bosses could never give me goosebump and the chill like dark soul 3

Designwise both bosses are pretty neat, but the gameplay is fuggen ass. Throne Watcher and Defender in DS2 is much of the same, but fucking nobody likes that fight.
DS 3 was hugely flawed, but at least they did some nice gank fights

That leaves a gimped parry edgelord with 2 swords, a huge tentacle that is somewhat harmless, and Twin Princes. All of these aren't that hard if you summon other players, because you remove the need to wait for defensive play by trading aggro.

I also played through the whole series (again) (recently) and my rankings are DS1 >= DeS >>>> DS2 >>>> DS3
