The initial appeal is discovering all the unique interactions and areas, but once you get beyond that it becomes a game of consistently using an enormous toolset to make the right decisions. ASCII is fine for roguelikes where there are a limited number of tile elements in a relatively empty maze. There is no visual confusion because the screen only has as much on it as is necessary, leaving the important things readily identifiable among otherwise blank space.
ASCII is not fine for DF where every single tile on the screen has something on it at all times, and 256 characters are not enough to convey the thousands of elements in the game so there is a dependency on colors as well. It's too much visual noise, and no one tile stands out from any other because of the lack of blank space, forcing you to constantly process and interpret the individual characters instead of simply knowing what is on screen at a glance.

Qud is pretty bad in that you can run through the woods and not even notice you are getting hit by shit. That being said it uses enemy colors in the same way nethack does, just with very abstract tiles instead of ascii. It's also a terrible game, basically the roguelike version of skyrim.

ASCII mods for pc that are guaranteed to impress your players. Why play NetHack if you can play Starbound? They have 4D pixel art. I suppose you're either using mongodb or your 3D graphics card to do that, but I digress. Some programmers found the existence of ASCII code so remarkable that they created corresponding codes. Plus even better, they can be read by bad-meaning-yes-but-actually-bad kids. Just point them at the stat-gain man's ASCII-leauge and go have a blast. (Local flea markets ect) And a fine mechanism for generating ASCII numbers that are guaranteed to impress players, you don't need the CD, the floppy disk or notepad to add something as special as that. So, what are you waiting for? Start learning ASCII
