I personally connect with the Fate route more than UBW due to how well done the scenes between Shirou and Saber are and how their relationship develops throughout the route. They’re both thought of as similar people, and even Saber is guilty of that, until she learns that Shirou would never go back and try to fix the past due to his own belief of living for the future. Shirou is such a kind hearted person to want Saber to find her own happiness considering she never had opportunity to find peace in her own life as a machine-like King. I can’t say the same for Rin and Shirou’s relationship. While they have better chemistry and a more believable romance, their relationship isn’t as interesting to me or made me invest in that route in comparison to the Fate route. Romance wise Fate beats out UBW, but falls short to HF.

In F they make a big deal about all the heroes' names (let's disregard that learning truenames is useless unless you fight Achilles) so that they can just ignore namelearning for later routes.
But Kirei is always given the same respect and mystery despite him being just an asshole who gets away with everything because muh church training. Same goes for Zero but thats for another discussion.

I actually don't like the other routes that much, they really have different atmosphere and pacing. UBW is good because of Archer, but it's too violent and fast-paced. HF just has a really shitty, petty message, and no amount of cool content can fix that. That route is simply revolting. Its "Mind of Steel" part is kinda fresh, but still just a glorified Bad End.
Fate route is really grounded, "low-fantasy", the main characters there are really unusual themselves and pursue really unusual goals. A really unique, warm story.
