As a whole I prefer vanilla over everything else though. I prefer to play games as intended. Games that need mods need to be made better themselves. If you need mods to play then it's not worth playing.
As we go we keep getting more and more of what I liked in some of the mods though so I'm content to wait and hope they eventually get all of the few reasonable ones I want. We've gotten several I never would've thought we would in comparison so thus far I think my hope is reasonable for the more reasonable ones.

Because there was a big gap between 1.7.10 and 1.8's release, so a bunch of mods were made for it as the latest version and even after updates came out people continued modding 1.7.10 because updating mods is a bitch and most people play modpacks and want their mods to be on the same version. A similar thing happened with 1.12 later.

I liked Minecraft the best around the time the Nether was introduced. Nothing to do with the Nether, it just had the most features with the least bloat.
Modern M*craft if a nightmare of stupid shit like people flying around with wings, enchanted armor, flying enemies like the Morrowind Cliff Racers, stupid underwater structures with bosses that cast debuffs on you preventing you from destroying anything that can be cheesed by putting doors underwater which allow you to breathe, stupid raids, immortality dolls etc.
Modern minecraft just isn't any fun to play online, and if you are not playing online it's not fun at all.

Alpha 1.1.2 and 1.2.0 for nostalgia.
Release 1.7.10 for mods that didn't make it.
1.14 for the most polish now. I hope the mods make it to 1.16 soon enough.
Though porting resource packs that made use of metadata in connected textures is a pain.

1.14 is much less stable than versions like 1.12
in fact, 1.14 is so bad that many servers simply did not update to it and are only considering to update now with 1.16, where most of the glaring issues of 1.13 and 1.14 are fixed
