So one thing I don't understand about evolution, why is it that pests with super short lifespans and thousands of children, like Rats and Cockroaches, don't evolve to adapt to humans?

Evolution happens in response to changing environmental pressures, and these insects along with everything else is absolutely evolving to deal with the pressures humans create

Pests evolved to have numerous children because they are small and easily killed, so having more children increases the likelihood of survival.

Humans evolved to be bigger and smarter, which means we don't need to have thousands of children, we simply need to nurture them until they are strong on their own.

Both methods work for different reasons. Neither needs to change their current methods of survival unless the situation calls for it.
