SARS, several of the viruses that cause 'common colds', and I think MERS were coronaviruses. SARS originated in China. Doing SARS drills in China is like doing Ebola drills in Africa or meth test drills in OP's hometown.
Coronaviruses are also a good choice for disease wargaming because they're highly contagious and hard to contain - a response that works on them works on anything else you might want to contain.
