There was a huge number of mostly nomadic ethnic groups living along the Volga river and in the steppes of what is now Sourthern Russia. When Mongols came, they conquered them, but were quickly assimilated. Modern-day Volga Tatars are mostly the descendants of these pre-Mongol peoples mixed with Mongols (though the Mongol admixture is very small).
Historically, Tatars was how Mongols were called in Russia (iirc it was originally the name of one of the tribes in the Mongol empire, but eventually it came to denote almost all Turkic and Mongolic people).

The truth is that people identifying as Russians and Volga Tatars are not of mostly Slavic or Turkic ancestry, but part-Irano-Sarmatian and part-Finno-Ugric. Of course, at some very ancient age, even those were assimilated by Sarmatians and Uralics but even the name of their ancient languages are lost now

No. Kazan Tatars come from Volga Bulgarians, a proto-turkic tribe that went north from Anatolia into the Russian heartland (before it was Russia), then mingled with finno-hungarians. Some sources say they also picked up some persians on the way, but I'm not sure. That's why most Tatars have fair skin and blue/green eyes are not uncommon.
Anyway, there are also Siberian Tatars, who kind of look like hapas. There are also different flavours of Southern Tatars, like crimean and astrakhhan, I'm pretty sure they are the remnants of Mongolian empire. They have that tanned Charles Bronson look.
