Hunting is not of much use if you don't know shit about how to track, clean, prep, cook and store the meat. You are going to be way more danger to yourself and others out in the woods unless you go with soemone who actually knows what they are doing and very carefully follow all of their instructions. You better have a strong stomach too, because most people have never actually killed let alone processed anything they have eaten.
Food-wise, you should really look into things like hydroponics and victory gardens. That's a lot easier, cheaper, safer and less stomach-turning to deal with than going hunting with no idea of what you are doing.
It's also a lot less legal headache in a state where frankly, the state government is gradually moving to prohibit hunting or the very idea of civilian firearms ownership full-stop. Nobody is stopping you growing your own produce for your own use (yet).
It's not the exciting answer, but it's a plan that will take you a lot further than "hurr, I get gun I don't know how to use, I hunt nao".

California's gun laws are very strict, arbitrary, complicated and intricate. I can give a very basic summary, but you should really do a lot more research lest you step on a landmine and get fucked by the law (and you will be locked up longer as a gun owner who screws up than almost any violent criminal, because they pander to that demographic and seek to keep law abiding taxpayers afraid and in line).

Most gun stores in the populated areas are shuttered by local government orders right now because they are not considered essential.
You can't legally buy a gun without buying it through a gun dealer. The "gun show loophole" (Ie private party sales done cash and carry without a licensed dealer) doesn't exist in California.
You cannot legally cross state lines to buy a firearm from a private party.
Some stores are open.
In that case, you need to go there, wait forever, take an FSC test (google a study guide for it just in case but it's pretty easy), pay $25 for the FSC, pick the gun you want to buy, fill out the 4473, pay like 440 in DROS fees, pay for the gun, pay sales tax, fuck off for 10 days, pray the store is still open, pick it up within 30 days of DROS, complete a safe handling demonstration, you now own a gun.
The guns you can buy are a bit limited.
Shotguns and manually-operated (bolt-action, lever-action, single-shot) rifles aren't too restricted. Due to panic buying almost all buckshot is unobtanium so you won't find much to shoot out of a shotgun that's effective for self-defense, otherwise I'd recommend a Mossberg 500 or Maverick 88.
Semi-automatic rifles are pretty heavily restricted, but you can buy something that has no banned features (flash hider, vertical pistol grip, folding stock, etc.) with a detachable box magazine pretty easily. Ruger Mini-14, Ruger PC Carbine, Springfield M1A are all good options. there are also AR-15s and AKs and other stuff that would normally be banned that are legal because they have a fin on the grip. M1 Garands and SKS rifles are a bit old, but not a terrible option.

Pistols are a pain to get, but actually quite useful because they can be concealed. You need a permit to legally carry a handgun, but if it's a real clusterfuck it's up to you to decide how closely you want to follow the law. There is a bit more red tape to buy one, but it's just a secondary proof of residency.
The real pain is that most models of handgun in production are effectively banned, due to a "safety test" that's been modified so much that practically no new model can possibly pass it. this means there is a limited number of handguns in production available to buy, although that includes all 3rd gen (not 4th or 5th) Glock pistols, Springfield XD (not XDm), Beretta PX4, Sig SP2022, good chunk of RIA 1911s, Beretta 92F/FS, Ruger SP101, Ruger GP-100, S&W SD9, Hi-Point C9, and a couple hundred more. So there are options.
Also all single-action revolvers with barrels over 4" along with all single-shot, olympic target and C&R (basically over 50 years old) pistols are exempt.
The gold standard combo anywhere in America is a Glock 19 for pistols, Mossberg 500 for a shotgun and AR-15 for a rifle. All 3 are normally available in California in some form but all 3 are scarce today. Something like a Springfield XD, H&R Pardner Pump and Ruger Mini-14 would be adequate alternatives that would serve you almost as well.

Just look up a study guide for the FSC, there are several. FSC covers basic firearms safety, basic state and federal gun laws and basic gun knoweldge. A read through a few study guides should give you a good primer on all of that stuff (which you should absolutely know and then some) and will leave you more than equipped to take the test. It is multiple choice and you are allowed to get something like 7 out of 24?-ish questions wrong and it's strictly pass/fail so you'd have to be retarded or ESL to fail. Most of it is common sense and you can make an educated guess if you get stumped by a question.
If you graduated from high school or even passed one community college class it should be easy.

You really don't want to try to go innawoods there. It's mostly desert and there isn't all that much to live off of, besides which if food gets scarce (which is probably won't because CA has an amazing capacity for agricultural output) people will hunt that environment dry pretty fast.
If you are thinking manually-operated rifles, there are a lot of affordable options but you are severely hampering yourself if you think you may get into a gunfight because semi-autos are the default choice and suppressive fire/maneuver is a thing. You will be outgunned by almost anyone.
A nice bolt or lever-action rifle is fun at the range and perfectly adequate for hunting (which you don't know how to do at all), but quite badly behind the curve for defense. Better than nothing though.
If stores in your area are still open, look around at what's available.

I grew up in California but no longer live there. Pro gun all my life. The amount of previously anti gun people who now want guns is blowing my mind. Your best bet is to hunker down, stock up on canned goods and water as much and as often as you can, and wait this out.
FWIW, I doubt this will cause a true breakdown of society. There may be some unrest and violent deaths, yes, but not an overall breakdown. I just hope that, once you see things start to get better, you don't go into a false sense of security and say "oh, I guess I don't need guns after all. I was just panicking and crazy.
