The Egyptians were prolific writers. They wrote about everything. They even wrote each other letters about stuff like what food they had for dinner. Kept meticulous records of everything. All this stuff has been found at Giza and documented. There is not one single written account of the Jews ever being held slave in Egypt.
Egypt also had a standing army. The best and most sophisticated in North Africa in their day.

I don't even think they're denying that they refused to fight for Jerusalem. That's why they've become eternal wanderers.
