Definitely possible but be careful cause where you live is not a humid rainforest plentiful with resources. Your winter's would mean certain death if not experienced with surviving in the snow with just a small open shelter and fire

i feel like theres a big difference between totally off grid and almost completely independent. you can have ways to farm, save food, solar panels, gas generator, store propane, have wells, and many other ways to make it so you are largely independent from the grid. so if economic collapse happens u can have some level of preparedness. if anything u want satellite internet and a means to work from your computer. so 95% off grid with supplies and systems to keep u going for years (and proximity to a hospital if needed) is totally reasonable IMO. idk how much of ur paycheck its worth to invest in but tahts ur call
