The Mexican population of that area in 1848 was ludicrously tiny. There were less than 7 million people in Mexico OVERALL at the time, and they were all clustered in central and southern Mexico. That's the reason that tiny rebellions - literally numbered in the hundreds of men - were able to take Texas and California from them.

It's notable that no attempt was made to expel Mexicans from these territories after the Treaty of Guadalupe Hidalgo was signed, because there were virtually no Mexicans in them. Many Spanish-era land titles were even honored, and the landholders allowed to stay. The Latino "connection" to this land didn't exist; it was just lines on a map assigning one group of settlers or another the job of killing the Indian tribes who lived there. The war changed where the lines on the map were, and reassigned some Indian killing to British and German people instead of Spanish people.

There were Mexican secession movements in the Yucatan and northern Mexico after the Mexican-American War and certain leaders in those areas considered asking the US government for annexation. During the war there was also a short-lived movement where some American farmers in modern-day northwestern Mexico attempted to break away and join the US. Ultimately it never went anywhere though. Same thing happened with the Dominican Republic.

The territory we annexed under the Treaty of Gaudalupe-Hidalgo was very sparsely populated, that's part of why Mexico was willing to part with it in the first place after the war. American troops were marching in Mexico City, we could have taken a lot more and some US Senators wanted to annex the place all the way down to roughly Veracruz, but it failed to get approval specifically because there were too many Mexicans there. The idea of some empty territory taken nearly 200 years ago as a long-standing historical grievance is just a way for Mexican-Americans to cope with their lower socio-economic status in the US. Rather than take pride in either American or Mexican history they choose to just bitch about a war that has nothing to do with anyone alive.
