Hitler demanded that the Free City of Danzig (which was NOT part of Poland) be returned to the Reich (which was OK with Danzig itself because it was already administrated by its local branch of the NSDAP) and that in the future a plebiscite on the question of West Prussia be held.
Marshal Rydz-Smigly rejected this and on 30th/31st of August declared the mobilization of the Polish Army.
Hitler did not START the war. In fact he just continued the policy of Gustav Stresemann; accept the loss of territory in the West/North, reject loss of territory in the East. That has to do with the way Germans were treated and the fact that Poland undemocratically annexed territories which were not even promised to them in the Versailles Treaty (East Upper Silesia, Posen etc.). German was banned from public use, German schools were closed, German street names were replaced with Polish ones etc.
Hitler in fact corperated very well with Pilsudski, signed a non-aggression pact and ENDED the German-Polish trade war of the Weimar Republic. Hitler even allowed the Polish minority in Germany to keep their representative organization (Bund der Polen in Deutschland), even allowing them to have a congress on 6th of March 1938, even allowing the organization to continue until 27 of February 1940, well after Poland was occupied. Pilsudski's sucessors, Moscicki and Rydz-Smigly, were not willing to corperate.
The WORST thing in this is the role that Britain played. France was actually more reconcillatory in many aspects, seeing that Stresemann already improved relations beforehand. The French allowed the Saarland to return and the Rhineland to be reoccupied, thankfully.
The problem with the Brits was that they did not treat Germany like a souvereign nation that could solve its own border disputes.
Britain weas a Judas goat, Poland was a scape goat. The secret Anglo-French protocol for the protection of Poland was specifically targeted against Germany, NOT the USSR.

Hitler could have smashed Czechoslovakia with absolute ease. This artificially constructed state (which was created at the whim of the British with support of radical Czech nationalists, post-WW1) had NEVER existed in history, and only served to create political strife between Germans and Czechs, when there used to be peaceful co-existance.

Czechoslovakia had their own version of the Maginot line. Sure, Hitler could have won a prolonged war (in contrast to a general Blitzkrieg which would not have been possible) but this would have had the lingering Soviet Union, France, and Britain rallied against him.
The Sudetenland compromise was meant to sway Hitler against the Soviet Union, but Hitler thought appeasing communists to kill the noble Poles was more important.
