Buildings are build to prevent the spread of fire. That means if you want to get rid of stuff that is spread through out the building you would have to start a fire in multiple places. If you manage to do this, the building isn't very likely to collapse, which means that a criminal investigation will be done that's guaranteed to expose your crime.
Leveling the thing is the most reliable and failproof thing you can do.
