I use to make a shitload of money as a waiter. You get a job doing country clubs as an incredibly robust, efficient and respectful waiter/bartender and the money flows in like hell.
The problem with tipping in America is that it use to be a gracious reward for service. Between the customer and the waiter/buskeep/bartender. Fast forward to the 80's and onward when national casual dining franchises started to really get big, they also wanted in on those shekels and thus started taking tips and adding them to your paycheck after taxes. So you had managers saying "if you don't make 18-21% tips you're laid off" when it's none of their fucking business to meddle into the affairs of a transaction between the labor and the customer. That's one reason why I always worked in non-franchise restaurants primarily with richer people.
